Straight Rye

Using a majority of rye (>70%) in this recipe, our Rye Whiskey already has a pleasant, but very present spiciness. It was aged in new #3 charred oak barrels.
Cask Strength Bourbon

This Bourbon comes straight out of the cask (well, we filter out the barrel char!) and directly into a bottle. Same mash bill as our Straight Bourbon and aged ~ 5 ½ years. At ~110 proof, you get a little more strength than our Bottled in Bond, but it’s very smooth for a cask strength release. You’ll get more caramel and oak out of this release. Great for a mixed drink or maybe just one cube of ice.
Bottled in Bond Bourbon

This Bourbon complies with the 1897 Bottled in Bond Act. https://www.ecfr.gov/current/title-27/chapter-I/subchapter-A/part-5/subpart-F/section-5.88 started its life from corn we planted in March, 2018 and harvested that October. The mash bill for this is the same as our Straight Bourbon, but we choose barrels that at ~105 proof so we only add a few pounds of water to proof it down to the legal requirement of 100 proof. That way most of the liquid is aging for the 5 ½ years together. Try a sample neat first and you’ll be in for a treat. The notes of dried cherry, oak, and caramel sweetness are all amplified by the slightly higher alcohol percentage. Even the spicy rye finish is more noticeable.
